Butter Cookies

My brother, Nick,  asked me to make him some cookies to have when he came to visit me at school so I decided to make something with ingredients I already had in my apartment that way I didn’t have to run to the store to make him these cookies. So I came up with the decision to make some butter cookies because how could you not be happy with cookies that are mainly butter right?!?!?! Sounds good to me!

First, cream together granulated sugar and butter. In a separate bowl mix together the flour and salt.

Next, add in the egg and vanilla. Then, mix in the flour and salt.

Chill the dough in the fridge for 30 minutes to an hour. 

Preheat the oven to 400 degrees and cover a cookie sheet with parchment paper.

Once the dough has chilled, roll the dough into one inch balls and cook for 9 minutes.

When the cookies come out of the oven, transfer them to parchment paper on the counter and sprinkle with powdered sugar. Enjoy!

Ingredients
  1. 1 cup granulated sugar

  5. 2 2/3 cup flour
  6. 1/4 teaspoon salt
  7. 1/4 cup powdered sugar
Instructions
  1. Preheat the oven to 400 degrees and cover a cookie sheet with parchment paper
  2. Cream the granulated sugar and butter together
  3. Add in the egg and vanilla
  4. In a separate bowl mix the flour and salt
  5. Add the flour mixture to the mixer and combine
  6. Chill in the fridge for 30 minutes to an hour
  7. Roll into one inch balls and place on cookie sheet
  8. Bake for 9 minutes
  9. Sprinkle with powdered sugar
  10. Enjoy!
Notes
  1. You may need more or less powdered sugar depending on how much you want on top of the cookies

Chocolate Peanut Butter Bars

I had a big test coming up that I really needed to study for but something in me just knew that I needed to take a break from this studying that I was doing and what better thing to do during this break than to make a delicious dessert!! I am sure that my teacher will understand that making some chocolate peanut butter bars were a better decision that studying for his test. I mean just look at them, they look and tasted so good!

And to make things even better, they are not hard to bake and no time in the oven!! Except they do have to go in the fridge for a little but I could have studying in that time right?!?!

 

First, beat together butter and 1 1/4 cups of creamy peanut butter. Then mix in the powdered sugar and crushed graham crackers. Next mix in 1/2 cup of milk chocolate chips. Once this is all mixed together push it into a greased 13×9 pan.

Put this in the fridge while you make the chocolate topping.

In a small sauce pan, melt the remaining chocolate chips and peanut butter. Stirring occasionally.

Once the chocolate chips are completely melted take the pan out of the fridge and pour this on top of the bars and spread it evenly over them. Put them in the fridge for an hour or until the chocolate is firm.

When the chocolate is firm, take them out of the fridge and cut them into bars and enjoy!!

Chocolate Peanut Butter Bars

Ingredients
  1. 3/4 Cup butter, softened
  2. 2 Cups creamy peanut butter
  3. 2 Cups powdered sugar
  4. 3 Cups of graham crackers, crushed
  5. 1 Package milk chocolate chips, 2 cups
Instructions
  1. Grease 13x9 pan
  2. Beat together butter and 1 1/4 cups peanut butter
  3. Mix in powdered sugar and graham crackers
  4. Add in 1/2 cup chocolate chips
  5. Place peanut butter mixture into the pan
  6. Put the pan in the fridge while making the chocolate topping
  7. Melt remaining chocolate chips and peanut butter in a saucepan
  8. Pour chocolate topping on the bars
  9. Put back in the fridge until the chocolate is firm
  10. Cut into bars
  11. Enjoy!!
Notes
  1. I left my graham crackers a little bigger when I crushed them to add some crunch to the bars
  2. If you cannot wait as long to let the chocolate set, you can put them in the freezer to make it set faster

Cheddar Broccoli Soup

Now that it is cold out, it is always a good idea to make food that will warm you up on the inside as well as satisfy your hunger need. I have just the recipe that tastes delicious and will warm you up! This cheddar broccoli soup recipe is sure to do the trick!

First dice one half of a medium onion and cook it in a pot with butter.

Next, whisk the flour in with the cooked onions until it it blended together. Then add in the milk stirring occasionally to prevent it from burning for two minutes. While this mixture is cooking, prepare the broccoli.

After the two minutes are up, add in the cream cheese and stir until it has all melted. Mix in cheese, broccoli, salt and pepper. Cook soup for five more minutes and then serve!

Cheddar Broccoli Soup

Ingredients
  1. Half a medium onion, chopped
  2. 1 Tablespoon butter
  3. 1 Tablespoon flour
  4. 2 Cups milk
  5. 4 Oz cream cheese
  6. 1 Cup cheddar cheese
  7. 10 Oz broccoli, cooked and chopped
  8. Salt and pepper
  9. Additional cheese for topping
Instructions
  1. Mix onions and butter in a pot and cook for 4 minutes, or until tender
  2. Whisk the flour in with the onions
  3. Stir in the milk and cook on medium heat for two minutes,while stirring
  4. Add in the cream cheese and cook until the it is melted
  5. Add in cheese, broccoli, salt and pepper
  6. Cook for five minutes and stir occasionally
  7. Add cheese to the top of the soup, if you want
  8. Enjoy!

Oatmeal Raisin Cookies

Some people stay away from cookies with oatmeal in them because they think a healthy ingredient is going to make the cookies not as delicious as those cookies without them. But I’m going to let you in on a little secret…..these people are wrong!! Just because a cookie is filled with good for you ingredients does not make it taste bad, in fact they still taste quite good if you ask me.

First, combine the butter, white sugar, brown sugar and shortening together in a mixer. Then, add in the eggs and vanilla. While you are mixing together these ingredients together in a separate bowl mix together flour, oats, baking soda, baking powder, salt and cinnamon. Then, combine the dry ingredients into the wet ingredients slowly and until well incorporated.

Next, mix in the raisins. Then, form into one inch balls and place on a baking sheet covered with parchment paper.

Bake at 350 degrees for 8-10 minutes.

Oatmeal Raisin Cookies

  1. 1/2 Cup Butter, Softened

  3. 3/4 Cup Brown Sugar
  4. 1/4 Cup Shortening
  5. 2 Teaspoons Vanilla
  6. 2 Eggs

  8. 1 3/4 Cups Flour
  9. 1 Teaspoon Baking Soda
  10. 1 Teaspoon Baking Powder
  11. 1/2 Teaspoon Salt
  12. 3/4 Teaspoon Cinnamon
  13. 1 Cup Raisins
Instructions
  1. Preheat the oven to 350 degrees
  2. Place parchment paper on a cookie sheet
  3. Combine butter, white sugar, brown sugar and shortening together
  4. Mix in the eggs and vanilla
  5. In a separate bowl, combine flour, oats, baking soda and powder, salt and cinnamon
  6. Add the flour mixture into the wet ingredients until completely incorporated
  7. Mix in the raisins
  8. Form into one inch balls and place on prepared cookie sheet
  9. Bake for 8-10 minutes
  10. Enjoy!
Notes
  1. I used whole wheat flour when I made this recipe but all purpose flour would work as well.
  2. You can also add in some mini chocolate chips when you add in the raisins

Chocolate Covered Cereal Treats

Rice cereal treats are a snack that I have always enjoyed and once you add chocolate to the mix they get ever better!!

First, melt butter and marshmallows in a sauce pan until smooth.

Then add the rice cereal and stir until completely combined. Once combined, spread rice cereal into a greased pan.

Cut the treats into square. Melt chocolate in a bowl deep enough to dip the ends of the treats in.

Dip the edge of each treat into the chocolate and place onto wax paper to dry.

Before the chocolate hardens add sprinkles on to the chocolate.

Chocolate Covered Cereal Treats

Ingredients
  1. 3 tablespoons butter
  2. 1 10oz package marshmallows
  3. 6 cups rice cereal
  4. 1 bag dark chocolate chips
  5. sprinkles
Instructions
  1. Melt butter and marshmallows in a sauce pan and stir until smooth.
  2. Remove from heat
  3. Add rice cereal and stir until completely combined
  4. Spread into a greased pan and cut into squares
  5. Melt chocolate in a microwave safe bowl
  6. Dip the ends of the treats into the chocolate and place on wax paper
  7. Add Sprinkles
  8. Let the chocolate harden and enjoy
Notes
  1. When spreading into the pan add cooking spray to your spatula or wax paper so the cereal treats do not stick

Turtle Pretzels

Turtles have always been one of my favorite candies so finding a to make them at home was something I had to figure out. These turtles have a little added crunch to them because of addition of the pretzel.

First, line a cookie sheet with parchment paper and line it with pretzels.

Then place one chocolate covered caramel candy on each pretzel.

Bake in the oven at 350 degrees for 3 to 5 minutes. Then add a pecan to each candy.

Turtle Pretzels

  1. Chocolate covered caramel candies
  2. Pretzels
  3. Pecans, halves
Instructions
  1. Preheat the oven to 350 degrees
  2. Prepare a cookie sheet with parchment paper
  3. Place the pretzels on the cookie sheet
  4. Add a chocolate covered caramel candy to each pretzel
  5. Bake in the oven for 3-5 minutes. The chocolate candy should be soft but not melted.
  6. Place a pecan on top of each pretzel
  7. Let them cool completely
  8. Enjoy!
Notes
  1. I used square pretzels for my turtles but thin twist pretzels would work as well.

Chocolate Chip Shortbread Cookies

It’s that time of the year when cookies are a must have in your kitchen, you can’t have the holidays without cookies!! These chocolate chip cookies are going to melt in your mouth. If you are not a chocolate chip cookie fan, I would still advise you to try these ones out.

First, sift together flour, salt and baking powder, then set aside.

Beat together the butter and sugar.

Once they are creamed together, mix in the flour mixture slowly until completely incorporated.

Mix in the chocolate chips.

Bake at 300 degrees for 15 minutes and enjoy!

Chocolate Chip Shortbread Cookies

  1. 1 3/4 cups all-purpose flour
  2. 1/4 teaspoon salt
  3. 1/2 teaspoon baking powder
  4. 1 cup butter, softened
  5. 1/2 cup granulated sugar
  6. 3/4 cup milk chocolate chips
Instructions
  1. Preheat oven to 300 degrees and line cookie sheet with parchment paper
  2. Sift together flour, salt and baking powder into a medium bowl, then set aside.
  3. Beat together the butter and granulated sugar.
  4. Slowly mix in the flour combination until completely incorporated.
  5. Mix in the chocolate chips.
  6. Place teaspoon size balls of cookie dough onto the prepared cookie sheets.
  7. Bake for 15-20 minutes until they are starting to look golden brown.
Notes
  1. It took my cookies 17 minutes to cook, but remember all ovens are different so your cooking time may vary.

Holiday Cookie Balls

Hopefully everyone enjoyed their Thanksgiving feasts but it is now officially December, which means the next holiday is approaching quickly! What better way to start this holiday season off then with cookie balls!! Easy to make and a perfect snack for while you are decorating the house!

First, crush up the cookies. I always put them into a plastic bag and use a rolling pin to crush them.

Next, mix the crushed cookies and cream cheese together in a bowl.

Then, form into one inch balls and set them on a cookie sheet lined with wax paper. Put them in the freezer to harden.

Melt white chocolate chips in a microwave safe bowl until smooth. Place the balls into the white chocolate and make sure they are completely covered. Then return them to the cookie sheet. Once they are covered in the chocolate sprinkle red and green sprinkles on top. Return to the freezer for 20 minutes to let the chocolate harden. Take them out of the freezer and enjoy!!

  3. Mix cream cheese and crushed cookies together in a bowl
  4. Form one inch balls with cookie mixture and place onto prepared cookie sheet

  7. Dip the balls into the white chocolate until completely covered
  8. Add sprinkles to the top of the balls
  9. Place in the freezer for 20 minutes or until chocolate is firm

Apple Pie Bread

Apple pie is delicious on its own but when you transform it into bread form with layers of apples mixed with cinnamon and sugar it some how manages to get better!!

Start by beating sugar and butter together with an electric mixer. Once they are mixed together and creamy add eggs and vanilla.

In a separate bowl combine brown sugar and cinnamon. In a third bowl, mix together flour and baking soda.

Combine the flour and baking soda mixture into the butter mixture. Mix in slowly until all of the flour mixture is incorporated. Then add the milk.

Grease and flour a loaf pan. Pour half of the batter into the pan and put the other half to the side. Gently put half the apples and half the cinnamon sugar mixture into the loaf pan and press down slightly.

Add the remaining batter to the pan. On top of the batter add the rest of the apples and cinnamon sugar mixture.  Bake at 350 degrees for 30 to 40 minutes.

  5. 1 1/2 cups whole wheat flour
  6. 1 3/4 teaspoons baking soda
  7. 1/3 cup brown sugar
  8. 1 teaspoon ground cinnamon
  9. 1/2 cup milk
  10. 2 apples, peeled, cored and chopped
Instructions
  1. Preheat oven to 350 degrees
  2. Grease and flour a loaf pan(9x5)
  3. Beat granulated sugar and butter in an electric mixer until creamy.
  4. Beat in the eggs and vanilla extract.
  5. In a separate bowl combine the flour and baking soda. In another bowl combine brown sugar and cinnamon.
  6. Mix the flour mixture into the butter mixture until fully incorporated.
  7. Beat the milk into the batter.
  8. Pour half of the batter into the loaf pan. Place half of the apples and cinnamon sugar mixture into the loaf pan. Add in the remaining batter and top with the rest of the apples and cinnamon sugar mixture.
  9. Bake for 30-40 minutes.

Banana Bread

You bought bananas last week when you went to the store but now they are starting to get bruised and you do not want to eat them but that does not mean that you have to waste them. Put those bruised bananas to good use and make banana bread!! Banana bread is one of my favorite things to make because it is something the entire family enjoys.

First, cream together the butter and sugar.

Then add the eggs and mix until completely combined. While the eggs are mixing in, combine flour and baking soda in a separate bowl.

Once combined mix into batter.

Next mix in the bananas and nuts.

Pour batter into a loaf pan greased and floured. Then add sugar and nuts to the top. Bake at 350 degrees for an hour.

Banana Bread

  1. 1/2 cup butter, softened
  2. 1 cup + 1 teaspoon granulated sugar
  3. 2 eggs
  4. 2 cups flour
  5. 2 teaspoons baking soda
  6. 3 bananas
  7. 1/4 cups +1 teaspoon pecans, chopped (optional)
Instructions
  1. Preheat oven to 350 degrees
  2. Grease and flour grease loaf pan
  3. Cream butter and 1 cup sugar together in mixer
  4. Mix in eggs
  5. Combine flour and baking soda in a separate bowl
  6. Mix in the flour mixture
  7. Mix in bananas and nuts
  8. Pour into loaf pan and add remaining sugar and nuts to the top of the banana bread
  9. Bake for one hour. The bread will be cooked completely when a toothpick comes out clean
